As part of our summer Guest Chef Series, we’re proud to welcome Chef Danna Hwang of Viviennes’ Bistro (Mercer Island and Downtown Seattle) for a one-night-only dinner on July 3. Originally from Guangzhou, China, Chef Danna is known for her refined take on Cantonese cuisine — blending tradition with bright, seasonal flavors and elegant presentation.
This collaborative menu, including wine pairings, will be crafted alongside Casia’s own Chef Jason Wilson, with final plating and finishing touches presented live in our Cascade Room for an immersive dining experience.

We’re thrilled to host Guest Chef Ethan Stowell for an evening of extraordinary Northwest-inspired cuisine.
A multiple James Beard Award nominee and Food & Wine Best New Chef (2008), Ethan is the founder and CEO of Ethan Stowell Restaurants, the creative force behind more than 20 beloved Seattle spots including Tavolàta, Goldfinch Tavern, and How to Cook A Wolf. Beyond the restaurant world, he’s also a passionate advocate for healthy food in schools as a member of Eat Real’s Chef’s Council.
This one-night-only dinner will feature a custom collaborative menu with Casia’s own Chef Jason Wilson, expertly paired wine courses and final plating and presentation live in our Cascade Room.
